1st course Oyster with shaved lemon ice and pickled shallot

2nd course Wine poached pear, blue Benedictine, walnut crumb, truffle honey

3rd course Salmon tartare, creme fraiche, shallot, dill, beets

4th course Sous vide lamb loin, sultanas, lamb just, balsamic reduction, butter braised turnip, grilled rapini, pommes paillasson

5th course Chocolate bavarois, dark chocolate bark, pavlova, raspberry anglaise
